Crispy Tofu in Delicious Gravy

Crispy and gravy? They don't seem to go together?! Do they?

In this Crispy Tofu in Delicious Gravy recipe, I made the crispy tofu and the gravy separately. To keep the tofu crispy, I simply scooped the gravy over the tofu just before serving as tofu will absorb the flavours instantly.

I love crispy silken tofu. In the past, I have tried making crispy silken tofu with minimal oil a number of times but without much success .... until now. There are a couple of tricks I have learnt:

  • press out the water content in the silken tofu

  • coat pressed tofu with a mixture of rice and tapioca flour.

Ingredients

  • 100 gm of minced pork

  • 100 gm of prawn (1/2 minced, 1/2 chopped)

  • Marinade:

    • 1/2 tsp salt

    • 1/2 tsp sugar

    • 1 tsp sesame oil

    • 1 tsp soya sauce

    • 1 tsp cornflour

    • Dash of white pepper

  • 1 cup of red pepper (cubed)

  • 1 cup of frozen peas

  • 1 cup of mushroom (cubed)

  • 1 box of silken tofu

    • 1/2 cup of rice flour

    • 1/2 cup of tapioca flour

    • Dash of salt

    • Dash of black pepper

  • 2 tbsp of rice bran oil for shallow frying

  • Sauce

    • 1 tbsp oyster sauce

    • 1 tsp fish sauce

    • 1 tbsp soya sauce

    • 1 tsp dark soya sauce

    • 1/2 tsp sugar

    • 1 tsp sesame oil

    • 3 tbp water

    • 1 clove of garlic (chopped)

  • Thickener: 1 tbsp cornflour mixed with 1 tbsp water

  • 1 beaten egg

Method

1. Marinate the pork and prawn:

  • Add salt, sugar, sesame oil, soya sauce, cornflour and a dash of white pepper to the pork and mix well.

  • Add prawn and mix well.

  • Leave aside to marinate for 1/2 an hour.

2. Prepare the sauce:

  • Mix the sauce ingredients (oyster sauce, soya sauce, dark soya sauce, sugar, sesame oil and water together in a bowl. Set aside

  • Mix cornflour and water in a separate bowl.

3. Prepare the tofu:

  • Take the silken tofu out of the box and place it on a plate.

  • Place a couple of kitchen towels on the tofu.

  • Turn the tufo with the paper upside down and place it on the plate.

  • Place a couple of kitchen towels on the tofu.

  • Place a plate on top of the kitchen towel. This will help to press out the water content in the silken tofu.

  • Leave this for 1/2 an hour.

4. Just before frying:

  • Remove the plate and dry the tofu further with kitchen towels.

  • Cut tofu into cubes.

  • Prepare a mixture of rice flour, tapioca flour, salt and black pepper and place it on a plate.

  • Coat the tofu in the flour mixture. Make sure it is fully covered.

5. Frying the tofu:

  • Heat about 1/2 inch of oil in a flat frying pan.

  • Place coated tofu in the pan. Do not move the tofu until they are golden.

  • Flip them over to fry the other sides until they are golden on all sides.

  • Remove them to a plate.

6. Completing the dish:

  • In the same frying pan, add chopped garlic and fry till fragrant.

  • Add marinated prawn and pork and fry till brown.

  • Add peas, red pepper and mushroom and fry till cooked.

  • Add sauce and 1/2 cup of water and braise for a few minutes.

  • Thicken the gravy with cornflour mixture.

  • Stir in beaten egg and turn off heat.

  • Scoop the gravy over the tofu.
