Bak Kwa

Here is an improved version of Bak Kwa (Sweet BBQ Pork Coin). The meat has the right reddish hue due to addition of rose flower wine and the honey glaze provides a nice gloss. I have cut the meat into a coin shape using a cookie cutter after the meat has solidfied in the 130°C oven.

INGREDIENTS

  • 500 g Pork (with at least 10% fat) - minced

  • 1/8 teaspoon Five-spice powder

  • 1 tablespoon Oyster sauce

  • 1 teaspoon Sweet sauce (A1 sauce)

  • 1 tablespoon Light soy sauce

  • 1 tablespoon Dark soy sauce

  • 1/2 tablespoon Chinese rice wine

  • 1/2 tablespoon Rose Flower wine (see picture below)

  • 100 gm Sugar

  • 1/2 teaspoon Salt

  • 2 tablespoons Honey

  • 1 teaspoon sesame oil

  • A dash of White Pepper

  • Glaze: 1 tablespoon honey mixed with 1 tablespoon water

METHOD

1. Put all ingredients in a mixing bowl and stir the mixture until the meat becomes gluey (important step). Cling wrap and store in the fridge to marinate for several hours, if not overnight.

2. When ready to start cooking, pre-heat oven to 130°C  fan-forced. (yes, only 130°C, this is not a mistake).

3. Spread the marinated minced pork thinly (about 2-5 mm) onto baking paper.  Put another piece of baking paper on top and roll evenly using a rolling pin.  Put it on a baking tray.  Carefully remove the top layer of baking paper.

4. Bake in oven 130°C for 15 mins. The idea is to solidify the meat for cutting into appropriate shapes.

5. Remove from oven. Increase the oven temperature to 180°C (fan forced).

6. Wait for meat to cool slightly, then cut the meat into your desired size and shape using scissor or knife. For the coin shape, use a cookie cutter. Place them back on the baking tray.

7. Brush some honey water on top and grill at 180°C for 3 mins or till golden reddish brown.

8. Remove from oven, flip over another side.  Brush some honey water on top and grill for 3 mins or until golden reddish brown or slightly burnt.

Note: Due to the addition of honey, do watch your meat when grilling as it can burn easily.
