Air-fried Chicken

To me, a good fried chicken is one with a thick coat of deliciousness that is finger licking good. Yes, like KFC chicken but less oily.  I have tried marinating the chicken with various types of spices and a generous amount of flour to give it a nice thick crunchy coating. To reduce oiliness, I have airfiried the chicken instead of deep frying- easy to cook and no oily fumes in the kitchen. I am pretty pleased with this air-fried chicken recipe.

INGREDIENTS

4 chicken legs (half de-boned into a lollipop)

Marinade:

  • 1 tsp salt

  • 1 tsp ground ginger

  • 1 tsp ground black pepper

  • 1/2 tsp sweet paprika

  • 1/2 tsp ground coriander

  • 1/2 tsp ground cumin

  • 2 cardamon pods (split the pods)

  • 2 tbsp cooking wine

  • 1 tsp dry thyme

  • 1 cup of water

Coating:

  • 3 cups of flour

  • 1 tbsp cornflour

METHOD

  1. Marinate the chicken for 2 hours (preferably overnight).

  2. Pour the chicken and the marinade into the coating flours. Mix well and ensure that the flour stick to the outside of the chicken to form a thick coating.

  3. Spray the chicken with a little oil on both sides of the chicken. Place coated chicken in the air fryer basket.

  4. Cook at 180ºC for 10 mins. Flip the chicken pieces over and continue to cook for another 5 mins. till the chicken is fully cooked and golden brown. Enjoy!
