Okra Fries aka Roasted Lady Fingers

Okra or lady fingers is one of those vegetables that you either love or hate to eat. People dislike eating okra because of the slime when the seed pods are cooked. One way to get around this is to either roast it or deep fry it. Here is one easy way to roast okra to make okra fries. Okra Fries are crispy on the outside and tender on the inside and without the slime. It is simply delicious !Try this simple recipe and you will be able to convert those who normally wouldn't eat okra.

INGREDIENTS

  • A bunch of okra (wash and dry them)

  • Salt

  • Coriander powder

  • Ground black pepper

  • Olive oil

  • cornflour

METHOD

1. Ensure the okra is dry before cooking. Top and tail okra and split each okra into two.

2. Sprinkle with salt, coriander powder and ground black pepper.

3. Drizzle olive oil and stir the okra to ensure they are fully coated with oil and seasoning.

4. Place in the air fryer basket and roast at 180°C for 6 mins. Remove the basket and shake the okra at 2 mins interval. This will ensure even cooking.

5. Increase temperature to 200°C and roast for another 4 mins or until crispy. Keep checking on the okra and shaking the basket every 2 mins to ensure they are not burned. Okra fries are ready when they are crispy.

Note: If you don't have an air fryer, just use your oven.

  • Spread the okra on a wire grill rack in a single layer.

  • Roast at 180°C until crispy. Check on the okra fries to ensure they are not burned.
