Crispy Chilli Beef

This is a Taiwanese special. We first tasted this dish way back in 1989 in a Taiwanese restaurant. It soon became the family favourite.

INGREDIENTS

250 gm of beef (cut into thin strips)

1 egg

2 Tbsp cornflour

1/2 tsp salt

1/2 tsp white pepper

Sauce (mixed together):

  • 1 tsp oil

  • 1 chopped garlic

  • 1 Tbsp sweet chilli sauce

  • 1 Tbsp ketchup

  • 1 Tbsp soya sauce

  • 1 tsp sugar

1 tsp sesame seeds

3 Tbsp oil

METHOD

  1. Marinate beef strips with egg, salt, white pepper and cornflour. The mixture will be sticky.

  2. Heat the oil until very hot.

  3. Drop a small piece of beef into the hot oil. The oil is hot enough if the beef sizzles.

  4. Add the beef strips (in portions) into the hot oil. Separate them with chopsticks. Fry for 4-5 minutes until they are crispy and brown.

  5. Remove beef from the pan to paper towel. Pour the rest of the oil into a bowl. Clean the pan.

  6. Add 1 tsp of oil and chopped garlic to the pan. Fry until fragrant.

  7. Add the sauce and cook for a couple of minutes.

  8. Add the crispy beef and stir into the sauce and ensure they are well coated.

  9. Remove, sprinkle some roasted sesame oils on top and serve immediately with steamed rice.
