BBQ CHICKEN WINGS

BBQ Chicken Wings are very popular in Singapore. They are sold in many food courts all over Singapore. The sight of chicken wings threaded in long skewers and being grilled over hot charcoal fire is very inviting. The aroma is intoxicating.

It’s a very simple recipe - just marinate the chicken wings overnight and throw them over the charcoal grill. For those who prefer not to have to slave over the charcoal grill, using an air fryer is a good alternative to get that BBQ flavour.

INGREDIENTS

1 kg chicken wings

MARINADE:
3-4 cloves of garlic (chopped)
3-4 shallots (chopped)
1” ginger (chopped)
½ tsp salt
2 Tbsp sesame oil
2 Tbsp soy sauce
2 tsp dark soy sauce
1 Tbsp oyster sauce
1 Tbsp honey
½ tsp chilli powder
½ tsp white pepper

METHOD

1 Prepare the marinade. Combine the garlic, shallot, ginger paste with the rest of the marinade ingredients. Mix well.

2 Marinate the chicken wings for at least 2 hours, preferably overnight in the fridge.

3 Place the marinated chicken wings in the air fryer in a single layer. Brush some marinade over the wings.

4 Set the temperature at 200°C and grill the wings, turning them over after 10 minutes. Spread some marinade and continue grilling for another 10 minutes until the wings are crispy and golden brown.
