Fish Ball Noddles with Sauce & Ikan Bilis Broth

If you like bouncy fish balls in a bowl of noodles bathed in a delicious sauce, you will love this recipe.

INGREDIENTS (for 2 servings)

100 gm Hokkien noodles
10-12 fish balls
1 stalk of bok choy

100 gm minced pork - marinate with:
- 1 Tbsp soya sauce
- 1/2 tsp sugar
- 1 tsp sesame oil
- Dash of white pepper
- 1 tbsp cornflour

Ikan bilis broth:
- 1 Tbsp ikan bilis
- 1/2 Tbsp preserved vegetables
- 1 tsp oil
- 1 tbsp fried garlic

Sauce ingredients (per serving)
- 1 tsp fish sauce
- 1 tsp sambal chilli
- 1 Tbsp ketchup
- 1 tsp cooked oil
- 1 tsp sesame oil
- 1 tsp fried shallots
- 2 Tbsp ikan bilis broth

Garnish: Fried shallots, chopped spring onion, sliced chilli (optional)

METHOD

1. Marinate minced pork and set aside.

2. Pour 2 rice bowls of water into a pot. Add ikan bilis, preserved vegetables, oil and fried garlic. Bring to the boil and simmer for 15 mins.

3.Add fish balls to the ikan bilis broth. Cook till fish balls float to the top. Remove and set aside.

4. Add marinated pork to the broth and boil till just cooked. Remove and set aside.

5. Mix the sauce ingredients in each serving bowls. Set aside.

6. In a separate pot, blanch bok choy in the boiling water, strain and set aside.

7. Add the noodles and boil till just cooked. Strain and add to the serving bowls of sauce. Mix well.

8. Top the noodles with cooked fish balls, minced pork and bok choy.

9. Garnish with fried shallot, spring onion and sliced chilli.

10. Serve noodles with a bowl of ikan bilis broth on the side.
