Fried Chicken (KFC flavour OR IS IT?)

There are so many ways to make fried chicken. You can shallow fry, deep fry or air fry it. I prefer fry as it is less work, no air fumes in the kitchen and produces a non oily (hence more healthy) product. But nothing beats a deep fried chicken. A perfectly fried chicken is not only crispy on the outside but needs to be tender on the inside. You can also make fried chicken in any flavour.

In this video, I made deep fried chicken with KFC flavour - using the 11 herbs and spices, as leaked. Although I only miss out on 1 ingredient (dry mustard powder), I find that the taste is not quite KFC. I think some of the so-called "leaked" KFC ingredients are not correct. I will continue to experiment with the aim to replicate the tasty KFC flavour.

INGREDIENTS

  • 3 chicken thigh with skin (cut into large chunks)

  • MARINADE:

    • 1/3 cup of milk

    • 1 tbsp lemon juice

    • 1/2 tsp salt

    • 1/2 tsp black pepper

  • COATING:

    • 1/2 tsp ground ginger

    • 1/2 tsp garlic (mashed)

    • 1 tbsp white pepper

    • 1/4 tsp basil

    • 1/4 tsp oregano

    • 1/4 tsp thyme

    • 1/2 tsp salt

    • 1/2 tsp black pepper

    • 1 tsp sweet paprika

    • 1/2 tsp celery salt

    • 1/2 tsp dried mustard

    • 2 tbsp wheat flour

    • 2 tbsp rice flour

  • Oil for deep frying

METHOD

1. Place chicken thigh pieces and all marinade ingredients into a bowl. Mix well, cover and place in the fridge. Marinate for at least 2 hours, best overnight.

2. Place all the coating ingredients onto a plate. Mix well.

3. Place one piece of the marinated chicken onto the flour. Spoon flour over the chicken and ensure the chicken is fully coated with the flour. Repeat the process till all the chicken pieces ae fully coated.

4. Heat some oil (about two inches depth) in a frying pan.

5. Deep fry the chicken pieces until they are fully cooked and golden brown on both sides.

Note: If you prefer to air-fry, use panko bread crumbs instead of flour and add 1 tsp of oil to the coating. Air fry at 180°C for 10 mins on each side, or until golden brown.
