Lotus Root Soup

Here’s a recipe for a delicious, no-fuss and hearty comfort soup. Just pop all the ingredients for Lotus Root soup in a slow cooker in the morning and it’s ready when you are back from work ! Enjoy !


INGREDIENTS (for 2 servings)


  • 6 slices of lotus root (fresh or frozen) – 1 cm thick
  • 4 small dried cuttlefish
  • 1 tablespoon dried prawn
  • 8 red dates
  • 1 carrot (thickly sliced)
  • 1 cup of raw peanuts (without skin)
  • 4 garlic cloves (with skin)
  • 1 litre of boiling water

 

METHOD


Put all the ingredients in a slow cooker. Press start and enjoy the soup in 4 hours. Alternatively simmer for 2 hours.
