Lotus Root Soup
Here’s a recipe for a delicious, no-fuss and hearty comfort soup. Just pop all the ingredients for Lotus Root soup in a slow cooker in the morning and it’s ready when you are back from work ! Enjoy !
INGREDIENTS (for 2 servings)
- 6 slices of lotus root (fresh or frozen) – 1 cm thick
- 4 small dried cuttlefish
- 1 tablespoon dried prawn
- 8 red dates
- 1 carrot (thickly sliced)
- 1 cup of raw peanuts (without skin)
- 4 garlic cloves (with skin)
- 1 litre of boiling water
Put all the ingredients in a slow cooker. Press start and enjoy the soup in 4 hours. Alternatively simmer for 2 hours.
