Spicy Meatball spaghetti is a dish that never fails to satisfy. I love that super rich tomato sauce and the flavoursome meatball. For cheese lovers, you could sprinkle grated parmesan on top.
Whenever I run out of ideas on what to cook, this dish always spring to mind.
INGREDIENTS (makes 2 servings)
- 160 gm spaghetti (cooked in salt water and drained)
- 1 tablespoon oregano
- Meatball:
- 250 gm beef mince
- 1 tablespoon oyster sauce
- 1 teaspoon chilli powder
- 1 teaspoon sesame oil
- 1/2 teaspoon sugar
- 1 teaspoon light soy sauce
- 1 tablespoon fried onions
- 1/2 egg (beaten)
- 1 tablespoon thyme
- 1 tablespoon cornflour
- Sauce
- 1 tablespoon olive oil
- 1 clove garlic (minced)
- 2 tablespoon tomato paste
- 2 teaspoons sugar
- 2 tomatoes (chopped)
- 4 pieces of sun dried tomatoes
- 1/2 red pepper (sliced)
- 1 cup of water
METHOD
1. Put all meatball ingredients in a bowl and mix well. Roll tablespoons of mixture into meatballs.
2. Cook the spaghetti and drain.
3. Heat olive oil in a pan and fry garlic till fragrant. Add meatballs and fry till brown.
5. Add all sauce ingredients and bring to boil, then simmer for 5-10 minutes till sauce is thick and rich.
6. Add cooked spaghetti and oregano and stir through. Enjoy!
